Cheesy Baked Ziti

· 1 tablespoon olive oil
· 1 medium onion, finely chopped
· 3-4 cloves garlic, minced
· 1 pound ground Italian sausage (mild or hot) or ground beef (or a mix!)
· 1 (24-ounce) jar of your favorite marinara or pasta sauce (about 3 cups)
· 1 (14.5-ounce) can crushed tomatoes
· 1 teaspoon dried basil
· 1 teaspoon dried oregano
· Salt and freshly ground black pepper, to taste

For the Pasta & Cheese Mixture:

· 1 pound (16 oz) ziti or penne pasta
· 1 (15-ounce) container whole milk ricotta cheese
· 1 large egg
· ¼ cup fresh parsley, chopped
· ½ teaspoon salt
· 4 cups (16 oz) shredded low-moisture, whole milk mozzarella cheese, divided
· 1 cup freshly grated Parmesan cheese, divided
