For the cookie layer:
150 g butter cookies or whole-wheat cookies
50 g melted butter
For the cream:
250 g mascarpone or cream cheese
200 ml heavy cream
2 tablespoons powdered sugar (to taste)
1 teaspoon vanilla extract or vanilla sugar
Zest of ½ organic lemon (optional for freshness)
For the fruit topping:
200 g berries (e.g., strawberries, raspberries, blueberries)
1-2 tablespoons sugar or honey
1 teaspoon lemon juice
Prepare the cookie base:
Finely crumble the cookies (in a blender or with a freezer bag and rolling pin).
Mix with the melted butter.
Divide the mixture among the glasses and press down lightly.
